THE SANDSTORM
Calima, the name for sandstorms sweeping from the Moroccan Sahara to the Canary Islands, inspired this cocktail. Created by Spanish bar manager Mario Hernandez, it pays homage to his hometown and celebrates the rich shared history between Morocco and Spain.
Ingredients:
- 50ml Sahara
- 20 ml clarified cinnamon, lemon zest and almond milk cordial (or simply use almond syrup as alternative)
- 15ml apricot liqueur
- Soda for top up
- Fig for garnish
Instructions:
- Fill a mixing glass or cocktail shaker with ice cubes.
- Add Sahara, apricot liqueur and your homemade cordial (or almond syrup).
- Stir or shake well until thoroughly chilled.
- Strain the mixture into a chilled cocktail glass with ice.
- Top up with soda.
- Garnish with a fig slice.
- Serve and enjoy this special cocktail celebrating both Morocco and Spain!
